1 1/4 cups boiled baby potatoes halves (unpeeled)
1 tbsp butter
1/2 cup refried beans
1/4 cup salsa
1/4 cup sour cream
1 tsp dried oregano
1 tsp chilli flakes
salt to taste

For The Garnish
2 tsp finely chopped spring onion greens

  1. Heat the butter in a broad non-stick pan add the potatoes, mix well and cook on a high flame for 4 to 5 minutes or till the potatoes turn light brown in colour, while stirring occasionally.
  2. Add the refried beans, salsa, sour cream, oregano, chilli flakes and salt, mix well and cook on a medium flame for another 2 to 3 minutes, while stirring continuously.
  3. Serve immediately garnished with spring onion greens.
