Mini Mango Pancakes

In this innovative recipe, we have used a batter of plain flour and mangoes sweetened with sugar to make delicious pancakes.

We have cooked the pancakes in a mini size to make it more appealing to kids. With a hint of spices and a slightly buttery taste, these Mini Mango Pancakes taste really great.

Ingredients

3/4 cup mango cubes
1/4 cup powdered sugar
1/2 cup plain flour (maida)
1/2 cup cornflour
1/2 cup milk
2 tsp melted butter
1/4 tsp cardamom (elaichi) powder
a pinch of salt
4 tsp butter for greasing and cooking

    Method
  1. Combine the mango cubes and powdered sugar in a mixer and blend till smooth.
  2. Transfer the mixture into a deep bowl; add all the remaining ingredients and mix well using a whisk.
  3. Grease a non-stick mini uttapa pan with 1 tsp of butter.
  4. Pour 1 tbsp of the batter in each uttapa cavity, spread it lightly and cook on a medium flame using 1 tsp of butter till they turn golden brown in colour from both the sides.
  5. Repeat steps 3 and 4 to make 1 more batch of mini pancakes.
  6. Serve immediately.

These are so easy to make and kids will enjoy them the most, they are only enjoyed when they are served immediately, I always make this when mangoes are in season.
