1 1/2 cups boondi
1 1/2 cups whisked curd (dahi) , chilled
1/2 tsp chilli powder
1 1/2 tsp chaat masala
2 tsp cumin seeds (jeera) powder
salt to taste
2 tbsp chopped coriander (dhania)

  2. Add the salt to taste. You can skip adding salt if you are making Meetha (sweet) boondi.
  3. Add about ¾ cup of water. Add the water little by little to prevent the formation of lumps. Add about ¼ cup initially. 
  4. Mix it well with the help of a whisk. Break all the lumps.
  5. Now add the remaining amount of water and mix well.  
  6. Add ½ tbsp of oil. It makes the boondis crispy and also helps to pour the batter smoothly into the hot oil for frying.
  7. The batter should be of a pouring consistency. It should be slightly thinner than a dosa batter.
  8. Heat the oil for frying the boondi in a deep non stick pan. Pour about ¼ cup of the boondi batter into a large and round perforated spoon(boondi jhara) The holes in the Jhara should not be too large. Large holes will ruin the shape and size of the boondi. 
  9. Fry the boondi till they turn golden.
  10. Use another jhara (perforated spoon) to drain the boondi from them oil.
  11. Place the boondis on an absorbant paper to get rid of the excess oil.
  12. Repeat the steps 8 to 11 to make more boondis with the remaining batter. You will get around 3.50 cups of boondi. Store the boondi in an air tight container.

  2. Mix well using a whisk or a spoon.
  3. Now, add the chilli powder for the spice. 
  4. Add the chaat masala for a chatpata flavour.
  5. Add the cumin seeds powder. It provides an earthy flavour to the Boodi Raita.
  6. Now, add the boondi. We have used freshly made boondis. You can also use store-bought boondis. Make sure that the boondis are not soggy or rancid.If you like moist and soft boondis in the raita, soak them in enough water,drain and squeeze them before adding them  to your Boondi Raita. Alternatively, refrigerate the raita for 15 minutes before you serve.
  7. Add the coriander and mix well. It provides a hint of freshness to the Boondi Raita. 
  8. Finally, add the salt to taste.  Mix well. You can skip adding salt if your boondis are salty.

  1. To make Boondi Raita with cucumber take about 1 cup of grated cucumber. Squeeze out the excess water using your palms and place it on a clean and dry plate. Keep aside.
  2. Take a deep bowl and add the curd into it. Beat it up with the help of a whisk.
  3. Add approx. ¼ cup of water to thin the dahi down. Mix well with the help of a whisk.
  4. Add the grated and squeezed cucumber.
  5. Now, add ½ tsp chilli powder. 
  6. Also, add 1 ½ tsp chaat masala.
  7. Furthermore, add 2 tsp cumin seeds powder to the Boodi Raita with cucumber.
  8. Add about ¾ cup of boondi.
  9. Add 2 tbsp chopped coriander and mix well using a whisk. You can also substitute it wih finely chopped mint leaves.
  10. Add the salt to taste to Boondi Raita with cucumber and mix well. Do not ad salt if your boondis are salty. Always taste the raita before you add the salt.
  11. Serve the Boondi Raita with cucumber immediately.

  1. To make the Boondi Raita with mint, Take 1 ½ cups of curd in a deep bowl and beat it up using a whisk. This will provide a smooth and silky texture to the raita.
  2. Add about ¼ cup of water to make the curd thinner and to get the right consistency. Mix it well with a whisk or a spoon.
  3. Now, add ½ tsp chilli powder to perk up the flavour of the Boondi Raita with mint.
  4. Add 1 ½ tsp chaat masala for the desired Chatpata flavour.
  5. Add 2 tsp cumin seeds powder for the desired earthy flavour.
  6. Add about 2 tbsp of chopped mint leaves.
  7. To make the Boondi Raita with mint, Take 1 ½ cups of curd in a deep bowl and beat it up using a whisk. This will provide a smooth and silky texture to the raita.
  8. Finally, add the salt to Boondi Raita with mint, taste and mix well.

one of my favourite. Whenever i have a party at home. I make a huge quantity of this to go with my punjabi dishes.. Everyone just enjoys it.. the spixes added is what gived the flavour to this raita.. A good recipe to try..
