  1. Sevaiyan or Seviyan is nothing but semiyan (semiya), semolina vermicelli that have a noodle-like appearance. They are also known as shavige, semiyan and sevalu. They are a popular instant food that hardly takes any time to cook. It is widely used to make Indian recipes like Vermicelli Nut Idli, Sevaiyan ki Kheer, Sevaiyan Upma in a Microwave.

  4. Add 1 tsp ghee. Ghee has a rich, nutty flavor that adds a depth of taste to the pulao that vegetable oil or butter simply can't match.
  5. Add 1/2 tsp cumin seeds (jeera). Cumin seeds have a warm, earthy, and slightly bitter flavor that adds depth and complexity to the dish.
  6. Add 2 tsp mustard seeds ( rai / sarson). Mustard seeds have a pungent, slightly bitter taste that adds a unique depth to the Seviya Pulao.
  7. Add 5 to 8 curry leaves. The strong fragrance of curry leaves adds a delightful aroma to the pulao while it's cooking.
  8. Add 2 cloves. Cloves have a distinctive aroma that is both sweet and spicy. When they are heated in oil or ghee, they release their fragrant oils, infusing the Seviya Pulao with a delightful aroma that tantalizes the senses.
  9. Add 1 small stick cinnamon (dalchini).
  10. Add 1 cardamom (elaichi).
  11. Saute for a few seconds.
  12. Add 1/2 cup chopped onions. As the onions cook, they caramelize and release complex sugars, adding depth and richness to the pulao.
  13. Saute on a medium flame for 2 minutes.
  14. Add 1/2 cup chopped carrot. Chopped carrots add a delightful crunch and a touch of sweetness to the dish. They also contribute to a vibrant color and a well-rounded flavor profile.
  15. Add 1/2 cup chopped french beans. Chopped French beans enhance the flavor, texture, and nutritional value of Seviyan Pulao, making it a more well-rounded and satisfying dish.
  16. Add 1/2 cup green peas.
  17. Sauté on a medium flame for another 2 to 3 minutes.
  18. Add 1/2 tsp turmeric powder (haldi).
  19. Add 1 tsp chilli powder. Chilli powder provides the spiciness and heat level to the dish. You can adjust the amount of chilli powder to suit your desired level of spiciness.
  20. Add 1/2 tsp garam masala. Garam masala acts as a flavor enhancer and depth provider. It's a blend of warm spices like cinnamon, cloves, cardamom, and black pepper, which add a complex and aromatic touch to the dish.
  21. Add salt to taste.
  22. Sauté on a medium flame for 30 more seconds.
  23. Add 2 cups roasted whole wheat vermicelli (semiya).
  24. Add 2 cups hot water.
  25. Mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  26. Cover it with a lid and cook on a medium flame for 5 to 6 minutes, while stirring occasionally.
  27. Add 2 tbsp lemon juice. Lemon juice adds a bright, tangy flavor that cuts through the richness of the spices and ghee used in the dish. This creates a more balanced and refreshing taste.

Bored with the regular pulao, this is something really very different and equally tasty. sevaiyan pulao best in tiffin for the kids as it is so easy to make and quick in the morning to prepare, this pulao stays without sticking to each other for atleast 4 to 5 hours. I am very happy with this recipe.
