6 Crepes
3/4 cup Mexican Green Sauce

For the spinach filling
2 1/4 cups finely chopped spinach (palak)
1 chopped green chilli
100 gms paneer (cottage cheese), crumbled
1 chopped onion
1 tbsp butter
salt to taste

For the baking
3 tbsp grated cooking cheese

    For the filling
  1. Heat the butter and fry the onion for 1 minute.
  2. Add the spinach and green chilli and fry again for 2 minutes.
  3. Add the cottage cheese and salt.

  1. Fill the crepes with the spinach mixture and fold each one into a triangle.
  2. Arrange in a baking dish and pour the Mexican green sauce over them.
  3. Sprinkle the cheese on top and bake in a hot oven at 200 degree C (400 degree F) for 20 minutes.
  4. Serve hot.

Excellent dish , absolutely relished It took one hour to prepare but worth hard work. Ate with herbs toast.
