For Suran Fry
16 yam (suran) slices
1 tsp chilli powder
1 1/2 tbsp tamarind (imli) pulp
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1/2 tsp cumin seeds (jeera) powder
salt to taste
3 tbsp oil

To Be Mixed Into Dry Masala
1/4 cup semolina (rava / sooji)
1/4 cup rice flour (chawal ka atta)
1/2 tsp chilli powder
salt to taste

Method
For suran fry

    For suran fry
  1. To make suran fry, boil the yam slices in a deep non-stick pan with enough water for 6 to 8 minutes.
  2. Drain. Keep aside.
  3. Combine the chilli powder, turmeric powder, coriander powder, cumin seeds powder, tamarind pulp and salt in a deep bowl and mix well.
  4. Coat each yam slice with the prepared masala, then coat into dry masala from both the sides.
  5. Heat the oil in a non-stick tava (griddle) and place the coated yam slices.
  6. Cook them on a medium flame for 3 to 4 minutes till they turn brown in colour from both the sides.
  7. Serve suran fry immediately.
