Zucchini and Carrot Clear Soup

Well now this is not the usual vegetable soup that you make often for your family. The way of preparation remains unchanged but ingredients used are quite different. Vegetables used are only zucchini and carrots while the baharat powder completely alters the taste of this soup.

2 tbsp oil
2 tsp chopped garlic (lehsun)
2 tbsp chopped onions
1/2 tsp baharat
salt to taste
1/2 tsp freshly ground black peppercorns (kalimirch)
1/4 cup chopped tomatoes
4 cups vegetable stock
1/4 cup sliced zucchini
1/4 cup peeled and sliced carrots
2 tsp chopped celery
3 tbsp chopped parsley

For Serving
pita bread

    Main procedure
  1. Heat the oil in a pan add the garlic and onions and sauté till the onions turn translucent.
  2. Add the baharat, salt, black pepper and tomatoes and sauté for another 2 minutes.
  3. Add the vegetable stock and bring to boil.
  4. Lower the flame and add the zucchini, carrots and celery.
  5. Cover the pan with a lid and allow to simmer for about 20 minutes or till the vegetables are cooked.
  6. Add the parsley and mix well.
  7. Serve hot with pita bread.

A really nice quick not-every-day-soup. I was out of sellery, so did it without and still nice. A added a little pinch of cayanne pepper at each serving, which gives it just a tiny spicy hit.

Healthy clear soup. The vegetable stock makes the soup very tasty.
