For Baked Ribbon Sev
1/2 cup besan (bengal gram flour)
1/4 cup whole wheat flour (gehun ka atta)
1/4 tsp turmeric powder (haldi)
1/2 tsp chilli powder
1/4 tsp asafoetida (hing)
3/4 tbsp warm oil
salt to taste

Method
For baked ribbon sev

  1. To make baked ribbon sev, combine all the ingredients in a deep bowl and mix well and knead into a soft dough using enough water.
  2. Grease the ribbon shaped (the one with vertical lines) press mould with 1/8 tsp of oil, put a portion of the dough into it, press it and cover it with the lid.
  3. Press out ribbons of the sev arranging them straight on a greased baking tray and bake in a pre-heated oven at 180ºc (360ºf) for 10 minutes.
  4. Cool completely, transfer the baked ribbon sev into a deep bowl and break it into half using your fingers.
  5. Store the baked ribbon sev in an air-tight container and use as required.

  2. Add 1/4 cup whole wheat flour (gehun ka atta).
  3. Add 1/4 tsp turmeric powder (haldi).
  4. Add 1/2 tsp chilli powder.
  5. Add 1/4 tsp asafoetida (hing).
  6. Add 3/4 tbsp warm coconut oil or oil. Use coconut oil for a healthier life.
  7. Add salt to taste. We added 1/4 tsp salt.
  8. Gradually add enough water to make a soft dough. We added 3 tablespoons water.
  9. Knead into a soft dough.

  1. To prepare baked ribbon sev, shape the dough into a cylindrical roll. Before adding the dough in sev press taste for seasoning and adjust the flavors as per your preference.
  2. Take a “sev press”, fit the mold with these sized holes ( the ones with vertical lines) so the sev bakes well and is crisper.
  3. Grease the “sev press" mould with little oil using a brush to prevent the dough from sticking. 
  4. Put the cylindrical dough into the “sev press”.
  5. Grease a baking tray with oil using a brush.
  6. Press the dough down so that we can close the sev press lid.
  7. Press out ribbons of the sev arranging them in straight lines.
  8. Pre heat a oven for 10 minutes and bake masala sev at 180°c (360°f) for 13 minutes.
  9. Ribbon sev baked after 13 minutes. 
  10. Cool completely, transfer the sev into a deep bowl and break it into half using your fingers.

   It is usually made of besan and rice flour. Here is the recipe. https://www.tarladalal.com/ribbon-sev-41058r We have made this recipe healthy by substituting rice flour with wheat flour.

Hello , I have tried many recipes shared here. And they are just perfect recipes. here in the description paragraph it mentions rice flr and in the method it mentions gehu ka atta. which one to be used? thanks in advance

   Hello, Authentically it is made using rice flour and besan but since this is a healthy recipe we have substituted rice flour with whole wheat flour. You can use whichever you wish to if not keeping health in mind.
