Coriander, interestingly, is not blended with the drink but just chopped and stirred in, as blending it with carrots will make the drink turn black. This twist in the recipe also turns out to be tasty, because the herby flavour appears to be much fresher in this Carrot Coriander Juice than in cases where it is blended.

2 cups grated carrot
2 tbsp finely chopped coriander (dhania)
1/2 tsp lemon juice
salt to taste

  1. Combine the carrots and 2 cups of chilled water in a mixer and blend till smooth.
  2. Transfer into a bowl, add all the remaining ingredients and mix well.
  3. Pour into 6 individual glasses and serve immediately.

Wow !! a carrot based juice which isnt strained. I liked to idea of adding water to this juice instead of straining it and giving away with fibre... chopped coriander gives a very good taste and mouthfeel too.
