Tips to wash button mushrooms

  1. Never soak mushrooms in water. Use a damp paper towel to wipe each mushroom, one at a time, to remove any dirt. You can lightly rinse the mushrooms with cool water and pat them dry with paper towels.
  2. You can also lightly dust them in plain flour and rinse them with water.

For the mushroom stuffed with cheese stuffing

  1. Take 1 cup of grated processed cheese in a bowl.
  2. Add 1/4 cup of finely chopped onions to it. You can also use other crunchy vegetables like capsicum and colored bell pepper.
  3. Now add finely chopped garlic to this. There are many variations to this recipe, you can add ingredients of your choice to make the stuffing more interesting.
  4. Also add finely chopped green chilies. They provide a nice punch to the bland mushroom and cheese.
  5. Season the mixture with mustard powder. If you don't have or do not like the pungency from mustard, you can skip adding it.
  6. Add the bread crumbs. They provide a nice brown crust on baking.
  7. Add butter. It helps in binding together all the ingredients.
  8. Season the mixture with salt. Be careful while adding salt as we have used cheese. Mix well.
  9. Divide the stuffing into 25 equal portions and keep aside.

How to make cheesy mushrooms

  1. Choose fairly large mushrooms. Remove the stems of the button mushrooms. You can use any other variety of mushroom too.
  2. Discard the stems to form a cavity in the mushroom caps. If you do not want to waste the stems then you can chop them finely and quickly sauté them and add to the mixture.
  3. Stuff each mushroom cap with a portion of the stuffing using your hands or a teaspoon. While you are stuffing the mushroom, switch on the oven to pre-heat.
  4. Arrange the stuffed mushrooms on a greased baking tray.
  5. Bake in a pre-heated oven at 180°C (360°F) for 10 minutes. Bake till the mushrooms shrink in their size by losing water and the cheese melts.
  6. Serve this lip-smacking cheesy mushrooms at your dinner table along with salads and pasta.
