The fantabulous flavour of this Chunky Tomato Pasta is sure to sweep you off your feet! Although pasta is not usually recommended for diabetics, this delightful creation is fit to have as an occasional snack.


Unlike the usual calorie-laden and creamy pasta dishes, this tangy version combines whole wheat penne with lots of tomatoes and broccoli to satisfy your craving within a small but enjoyable portion size.

Chunky Tomato Pasta recipe - How to make Chunky Tomato Pasta

Ingredients

1 1/2 cups blanched , peeled , deseeded and roughly chopped tomatoes
1 cup cooked whole wheat pasta
2 tsp olive oil
2 tsp finely chopped garlic (lehsun)
1 cup blanched broccoli florets
1/4 cup fresh basil , torn into pieces
1 tsp dry red chilli flakes (paprika)
salt to taste

    Method
  1. Heat the oil in a broad non-stick pan, add the garlic and sauté on a medium flame for 30 seconds.
  2. Add the broccoli and sauté on a medium flame for 1 more minute.
  3. Add the tomatoes, basil, chilli flakes and salt, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  4. Add the penne, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  5. Serve immediately.

This is a good way of making the pasta healthy for diabetics. It has no cream, no cheese and yet taste was quite palatable. Tx for this recipe.

Light and full of flavors.. olive oil, garlic, basil & tomatoes with pasta is such an all time favorite Italian classic... and what makes this dish even more appetizing are the chunky tomato strips and broccoli florets... adding a great texture and volume to the whole experience.. Bon Appetito!!!

Chunky blanched tomatoes with crispy broccoli combine well with bow pasta to make a healthy carbo loaded dinner. Low in fat and I substituted the low fat cream with low fat milk to give the ideal base to the pasta.
