A Thai favourite. These flat rice noodles are cooked and tossed with paneer, spring onion, bean sprouts, peanuts, garlic and other spices. Use up the remaining peanuts for a garnish.

Ingredients


For Pad Thai Noodles
1 1/2 cups boiled flat rice noodles
4 tbsp oil
1/2 tbsp chopped garlic (lehsun)
1 cup bean sprouts
3 tbsp roughly chopped roasted peanuts
3/4 cup paneer (cottage cheese) cubes
1 tbsp soy sauce
1 tbsp sugar
1 1/2 tsp chilli powder
1 tbsp lemon juice
salt to taste
1/4 cup chopped spring onion greens

For The Garnish
2 tbsp chopped roasted peanuts
1 tbsp chopped spring onion greens
1 tbsp chopped coriander (dhania)

Method

  1. Heat the oil in a wok/kadhai add the garlic and sauté for a few seconds.
  2. Add the beans sprouts, noodles and peanuts, mix well and cook on a high flame for 2 to 3 minutes, while stirring continuously.
  3. Add the paneer, soya sauce, sugar, chilli powder, lemon juice, salt and spring onion greens and cook on a high flame for 2 to 3 minutes, while stirring continuously.
  4. Serve the pad thai noodles hot garnished with peanuts, spring onion greens and coriander.

How to make Pad Thai Noodles

  1. To boil your Pad Thai veg noodles , fill water in a deep vessel. Add salt and keep it on the flame for boiling. 
  2. Add about 1tsp of oil to the water. Oil will prevent the noodles from sticking to each other.
  3. Now, put the noodles into the vessel and let them boil for about 4-5 minutes.
  4. Drain the noodles and discard the water.
  5. Refresh with cold water.
  6. Keep it aside on a plate.
  7. Take a Wok or a broad non-stick pan. A wok is always better to use as it gives the best flavours. Put the oil in it.
  8. When the oil it hot add the garlic. This is very important as it gives a fab taste. Sauté for a few seconds till they release their aroma into the oil.
  9. Add the beans sprouts, these are easily available and are used widely in Chinese and Thai recipes. They are very time consuming to make at home and do not turn out perfect like the store bought.
  10. Add the boiled flat rice noodles.
  11. Add the peanuts. This gives a very nice crunch to the recipe. 
  12. Mix well.
  13. Cook on a high flame for 2 to 3 minutes, while stirring it in between.
  14. Add the paneer, use fresh and soft paneer for best results. 
  15. Add the soya sauce. This gives a nice light black color and taste great as well.
  16. Add the sugar.
  17. Add the chilli powder. You can use chilli flakes also if you wish to. 
  18. Add the lemon juice.
  19. Add the salt. 
  20. Add the finely chopped spring onion greens. Use fresh ones and if possible cut with a pair of scissors they cut more properly than a sharp knife. 
  21. Give it a toss. Always use 2 flat spoons as it becomes easier to mix.
  22. Cook on a high flame for 2 to 3 minutes, while stirring in between.
  23. Garnish with peanuts to give more crunch to Pad thai veg noodles. Always use roasted and salted ones.
  24. Sprinkle spring onion greens and coriander as it will give a nice colour to Pad thai veg noodles.
  25. Serve your Pad thai veg noodles immediately as reheating is not advisable.

for someone who has never made thai food at home, this first time turned out very good. i made this for my sister when she was craving it and she loved it! the recipe is very informative and lovely :)

These spicy noodles have a notable and delightful taste of soy sauce. The paneer chunks in the noodles give a meticulous mouth feel along with the peanuts which give a great crunch.
