  1. Heat 1 tsp coconut  oil or oil in a pan. Consider using coconut oil  instead of processed seed oils for a healthier diet.
  2. Add 1/2 cup finely chopped onions. Onions have a slightly sweet and pungent flavor that complements the flavor of rajma (kidney beans) well. Onions add a bit of crunch and texture to rajma kebab. Raw onions are a very valuable source of vitamin C – the immune building vitamin.
  3. Sauté on a medium flame till they turn translucent.
  4. Add 1 tsp finely chopped ginger.
  5. Add 1 1/2 tsp finely chopped green chillies.
  6. Sauté on a medium flame for another 30 seconds.
  7. Add 1 cup soaked and boiled rajma (kidney beans), lightly mashed. Rajma is a complex carb and rich in Fibre which helps in Lowering Cholesterol levels. Rajma is rich in Potassium which is critical for those with High Blood Pressure as it lessens the impact of sodium.
  8. Add 2 tbsp chopped coriander (dhania). Coriander has a fresh, citrusy flavor that complements the earthy flavor of rajma well. Coriander is a fairly good source of iron and folate – the 2 nutrients which help in the production and maintenance of red blood cells in our blood.
  9. Add salt to taste.

  10. Add ¼ tsp turmeric powder.
  11. Add ¾ tsp garam masala.
  12. Add 1/4 cup besan (bengal gram flour). Besan is a natural binding agent, which means that it helps to hold the ingredients in the kebab together. This is especially important for vegetarian kebabs, which do not contain meat to help bind the ingredients.
  13. Mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  14. Remove in a bowl and keep aside to cool slightly.
  15. Divide the mixture into 8 equal portions.
  16. Shape each portion into 50 mm. (2”) oval flat kebab.
  17. Place all the kebabs on a hot non-stick tava (griddle).
  18. Cook them using 1 tsp of oil till they turn golden brown in colour from both the sides.
  19. Serve rajma kebab hot with green chutney.

It turned out ok. Good as evening snack for kids. Ate with samosa chutney instead of green chutney. Needed more than 2tbsp oil even after cooking in non stick pan.
