Tweet Recipe Description for Baked Mexican Rice with Cheese Patties Preparation Time: 25 minsCooking Time: 20 minsBaking Time: 15 minutesBaking Temperature: 200°C (400°F) Makes 4 servings Show me for servings Ingredients For The Mexican Rice3 cups cooked long grained rice1 tbsp oil1/2 cup finely chopped onions1/2 tsp ginger (adrak) paste1 tsp garlic (lehsun) paste1/2 cup chopped and boiled french beans1/2 cup chopped and boiled carrot1 tsp chilli powder salt to tasteFor The Cheese Patties1/4 cup grated processed cheese1 cup boiled , peeled and mashed potatoes1/2 cup crumbled paneer (cottage cheese)2 tbsp finely chopped coriander (dhania)2 tsp finely chopped green chillies1 tbsp cornflour salt to taste oil for greasing and cookingFor The Tomato Sauce1 1/2 cups fresh tomato pulp1 tbsp oil1/2 cup finely chopped onions1 tsp garlic (lehsun) paste1/2 tsp chilli powder1/2 tsp dried oregano1/2 tsp sugar salt to tasteFor The Topping1/4 cup grated processed cheese Method For the mexican riceHeat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes.Add the ginger and garlic paste and sauté on a medium flame for a few seconds.Add the french beans, carrots and chilli powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.Add the rice and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.For the cheese pattiesCombine all the ingredients in a deep bowl and mix well.Divide the mixture into 12 equal portions and roll each portion into a 50 mm. (2”) diameter flat round patty.Heat a non-stick tava (griddle), grease it with a little oil, place all the patties on it and cook on a medium flame, using a little oil till they turn brown in colour from both the sides. Keep aside.For the tomato sauceHeat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 2 minutes.Add the tomato pulp, chilli powder, oregano, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.How to proceedJust before serving, spread the rice on a greased deep baking dish.Place the cheese patties over the rice and evenly spread the tomato sauce.Top it with cheese and bake in a pre-heated oven at 200°c (400°f) for 10 minutes.Serve hot.
