Ingredients


To Be Mixed Into A Potato Layer
3 cups boiled , peeled and grated potatoes
3/4 cup crumbled paneer (cottage cheese)
2 tbsp finely chopped coriander (dhania)
2 tsp finely chopped green chillies
2 tsp lemon juice
salt to taste

For The Spinach and Corn Layer
1 1/2 cups chopped spinach (palak)
1 1/2 cups boiled sweet corn kernels (makai ke dane)
1 tbsp butter
1/2 cup finely chopped onions
1 1/2 tsp finely chopped green chillies
1/2 cup finely chopped tomatoes
salt to taste

Other Ingredients
melted butter for greasing
2 tbsp milk
8 tomatoes slices
1 tbsp fresh cream
3 tbsp grated processed cheese

Method
For the spinach and corn layer

  1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the green chillies and tomatoes, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Add the spinach, salt and corn, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

  1. Grease a 150 mm. (7”) baking dish using butter, add the potato layer mixture and spread it to make an even layer.
  2. Pour the milk over the potato layer, spread the spinach and corn layer mixture in the centre of the baked dish.
  3. Arrange the tomato slices surrounding the spinach and corn layer.
  4. Spread the cream and sprinkle the cheese evenly over it.
  5. Bake in a pre-heated oven at 180°c (360°f) for 15 minutes or microwave on high for 4 to 5 minutes.
  6. Serve immediately.

Tips
  1. Instead of spinach, you can also use mixed boiled vegetables.

Baked spinach with corn, this recipe is really very yummy and tasty, the paneer potato base with crunchy corn and cheesy top. I have served this to my guest during a get together. they have just loved it.
