Recipe Description for Soya Kheer

Ingredients

3/4 cup soya granules
2 1/2 cups milk
5 tbsp sugar
1 tsp cornflour dissolved with 1 tbsp water
1/4 tsp cardamom (elaichi) powder
1/2 tsp saffron (kesar) strands dissolved in 2 tsp milk

For The Garnish
1 tbsp almond (badam) slivers

Method
  1. Soak the soya granules in enough hot water for 5 minutes, cover with a lid and keep aside.
  2. Drain well and wash the soya granules 2 to 3 times under running water. Keep aside.
  3. Heat the milk in a broad non-stick pan and bring to boil, while stirring continuously.
  4. Add the soya granules, sugar and cornflour-water mixture and mix well. Cook on a medium flame for 4 to 5 minutes or till the kheer thickens, while stirring continuously.
  5. Add the cardamom powder and saffron-milk mixture, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  6. Cool completely and refrigerate for 1 hour.
  7. Serve chilled garnished with almond slivers.
