Ingredients


For Palak , Methi and Corn Subzi
1 cup blanched and chopped spinach (palak)
1/2 cup chopped fenugreek (methi) leaves
1/2 cup boiled sweet corn kernels (makai ke dane)
1 tsp oil
3 cardamoms (elaichi)
2 cloves (laung / lavang)
1 bayleaf (tejpatta)
salt to taste
1/2 tsp garam masala

For The White Gravy
2 tsp oil
1 cup chopped onions
1 tsp finely chopped ginger (adrak)
1 tsp finely chopped garlic (lehsun)
1/4 tsp finely chopped green chillies
1 tbsp broken cashew nuts (kaju)
1/2 cup whisked curds (dahi)
salt to taste

For Serving With Palak , Methi and Corn Subzi
whole wheat (gehun) parathas

Method

For the white gravy

  1. Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes or till they turn translucent.
  2. Add the ginger, garlic, green chillies and cashewnuts and sauté on a medium flame for 1 minute. Remove and keep aside to cool slightly.
  3. Blend in a mixer to a fine paste using 2 tbsp of water.
  4. Transfer the paste into a bowl, add the curds and salt and mix well. Keep aside.

How to proceed

  1. Heat the oil in a non-stick kadhai, add the cardamom, cloves and bayleaf and sauté on a medium flame for a few seconds.
  2. Add the white gravy and sauté on a medium flame for another minute.
  3. Add the spinach, fenugreek, sweet corn, little salt and ½ cup of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  4. Add the garam masala, mix well and cook on a medium flame for another 30 seconds.
  5. Serve hot with whole wheat parathas.
