Tweet Recipe Description for Spicy Corn Subzi Preparation Time: 15 minsCooking Time: 20 mins Makes 4 servings Show me for servings Ingredients 2 tender sweet corn cob , cut into 10 roundels salt to taste2 tbsp roasted and coarsely crushed peanuts2 tbsp oil1/2 cup finely chopped onions1 tsp finely chopped green chillies1 tsp finely chopped ginger (adrak)1 cup finely chopped tomatoes1/2 tsp chilli powder1/4 tsp turmeric powder (haldi)2 tbsp finely chopped coriander (dhania) Method Combine the sweet corn roundels, salt and enough water in a pressure cooker and pressure cook for 1 whistle.Allow the steam to escape before opening the lid. Keep aside.Heat the oil in a kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes.Add the green chillies and ginger and sauté on a medium flame for a few seconds.Add the tomatoes, chilli powder, turmeric powder and 2 tbsp of water, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.Add the coarsely crushed peanuts, salt and ¾ cup of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.Add the boiled sweet corn roundels and coriander, mix well and cook on a medium flame for another 2 minutes, while stirring occasionally.Serve hot.
