Ingredients


For Palak Paneer Uttapam
1 cup semolina (rava / sooji)
1 cup spinach (palak) puree
1/2 cup curd (dahi)
1/2 tsp ginger (adrak) paste
1/2 tsp fruit salt
salt to taste
5 tbsp oil for greasing and cooking

To Be Mixed Into A Mixture
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
1 tsp finely chopped green chillies
1/2 cup thickly grated paneer (cottage cheese)
1 tbsp finely chopped coriander (dhania)
salt to taste

For Serving
green chutney

Method

For palak paneer uttapam

  1. To make {span class="bold1"}palak paneer uttapam{/span}, in a deep bowl, add semolina, palak purée, curd and ¾ cup water and mix well.
  2. Heat a non-stick tava (griddle) and grease with a little oil.
  3. Pour a ladle of the batter on it and the paneer mixture over it and press it lightly.
  4. Cook for 1 minute on a medium flame. Smear a little oil over it and along the edges.
  5. Flip over and cook on a medium flame till the uttapam turns brown in colour and crisp from both the sides.
  6. Serve the {span class="bold1"}palak paneer uttapam{/span} immediately with green chutney.
