Hare Mutter Ke Parathe
Parathas and stuffed puris like Bhedawi Puri are also much-loved by the Rajasthani people. Whole wheat paratha made with a delicious, stuffing of green peas, this Hare mutter ke parathe are not only sumptuous but also excitingly crisp and flavourful. You can even stuff them with sautéed green moong dal spiced with fennel seeds, turmeric and chilli powder and create these magical dal ke parathe.
Rajasthani Rotis
Bajra Roti
Bajra grows in large part of arid parts in Rajasthan, bajra rotis are relished all over the state. Thickly rolled Bajra Roti are cooked over "kanda" (cow dung cakes) in the villages. To make them exciting you can even stuff it with cottage cheese and savour Paneer Bajra roti with garlic chutney, jaggery and homemade butter. With addition of little spices and potatoes, you can make Bajra Aloo roti which is a perfect breakfast dish when accompanied with sugar.
Missi Rotis
Although Missi Roti gets its unique flavour from besan, you can make the dough with a combination of flours. Kasuri methi and the other spices add just the right amount of zing to these Rotis. Serve these with a spicy vegetable or a tongue tickling launji.
Bejar Roti
Apart from these, Rajasthan has traditional preparations like the Khoba roti, where in the roti is made with indentation or cavity. Also, Bejar roti which is made with three wholesome flours. It is rich in protein and also provides a lot of energy and dietary fibre. Another delicacy is Tikkar, flavoured with ginger, garlic, onions, and more.
