Ingredients


For Ridge Gourd Chutney
1/2 cup finely chopped ridge gourd (turai)
3 tsp coconut oil or any other refined oil
1/2 tsp mustard seeds ( rai / sarson)
1 tsp chana dal (split bengal gram)
1 tsp urad dal (split black lentils)
a pinch of asafoetida (hing)
1 whole dry kashmiri red chilli , broken into pieces
2 green chillies , roughly chopped
1 cup chopped coriander (dhania)
1 tbsp tamarind (imli)
2 tbsp freshly grated coconut
salt to taste

Method
For ridge gourd chutney

  1. To make ridge gourd chutney, heat 2 tsp of coconut oil in a non-stick kadhai, add the ridge gourd and sauté on a medium flame for 2 minutes. Remove and keep aside.
  2. In a mixer, add the ridge gourd, coriander, tamarind, coconut, green chillies, salt and ¼ cup of water and blend to a smooth paste
  3. For the tempering, heat the remaining 1 tsp of coocnut oil in the same kadhai and add the mustard seeds.
  4. When the seeds crackle, add the chana dal, urad dal, asafoetida and red chillies and sauté on a medium flame for 2 minutes, while stirring continuously.
  5. Pour the tempering over the ridge gourd chutney and mix well.
  6. Store the ridge gourd chutney in an air-tight container and use as required.
