Ingredients


For Spicy Vegetable Pulao
1 cup boiled mixed vegetables (french beans and carrot) cubes
1/2 cup boiled green peas
3 cups cooked long grain rice (basmati chawal) or cooked rice (chawal)
2 tbsp ghee
salt to taste
1/2 cup deep-fried onions

To Be Ground Into A Smooth Paste (using 1/2 Cup Of Water)
7 garlic (lehsun) cloves
7 whole dry kashmiri red chillies , broken into pieces
1 tsp chopped ginger (adrak)
1 tbsp coriander (dhania) seeds
1 tsp cumin seeds (jeera)

For The Garnish
1/2 cup deep-fried onions
2 tbsp finely chopped coriander (dhania)

Method

For spicy vegetable pulao

  1. To make {span class="bold1"}spicy vegetable pulao{/span}, heat the ghee in a deep non-stick pan, add the prepared paste and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  2. Add the mixed vegetables, green peas, salt and 2 tbsp of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Add the rice and deep-fried onions, mix well and cook on medium flame for 2 minutes, while stirring occasionally.
  4. Serve the {span class="bold1"}spicy vegetable pulao{/span} hot garnished with deep-fried onions and coriander.
