Ingredients

1 cup cooked whole wheat penne , cut diagonally
1/4 cup orange segments
1/4 cup sweet lime (mosambi) segments
1/4 cup chopped capsicum
1/2 cup chopped and blanched carrot
1/4 cup finely chopped spring onions (whites and greens)
1 cup bean sprouts

To Be Mixed Together Into A Mint Dressing
3/4 cup thick fresh low-fat curds (dahi)
3 tbsp finely chopped mint leaves (phudina)
3/4 tsp mustard (rai/sarson) powder
3/4 tsp powdered sugar
salt to taste

  1. Combine all the ingredients for the salad in a bowl and refrigerate till chill.
  2. Just before serving, add the mint dressing and toss well.
  3. Serve immediately.

i never liked any pasta in a salad, but after tasting citrus salad i changed my opinion. very tasty and citrusy!
