Batter-coated and deep-fried paneer cubes are tossed with green chillies and spring onions to make this really scrumptious treat that can be served as a starter or as an accompaniment to the main course .

The Chilli Paneer Stir-Fry gets its attractive flavour from a combination of vinegar and oriental sauces like chilli and soya.

Ingredients


For Chilli Paneer
2 cups fresh paneer (cottage cheese) cubes
2 tbsp plain flour (maida)
4 tbsp cornflour
salt to taste
oil for deep-frying
2 tbsp oil for cooking
2 green chillies , cut into strips lengthwise
1 tbsp grated ginger (adrak)
1 tbsp finely chopped garlic (lehsun)
1/2 cup thinly sliced spring onions whites
1 tsp soy sauce
1 tbsp red chilli sauce
a few drops of vinegar

For The Garnish
1/4 cup finely chopped spring onion greens

Method
    Method
  1. Combine the plain flour, cornflour, salt and approx. ¼ cup of water in a bowl and mix well.
  2. Add the paneer cubes and mix lightly till the mixture coats the paneer well.
  3. Heat the oil for deep-frying and deep-fry a few paneer pieces at a time till they are very light brown in colour from all the sides. Keep aside.
  4. Heat the oil for cooking in a broad non-stick pan, add the green chillies and sauté on a medium flame for 30 seconds.
  5. Add the ginger and garlic, mix well and sauté on a medium flame for a few seconds.
  6. Add the spring onion whites, mix well and sauté on a medium flame for 1 minute.
  7. Add the salt, mix well and cook on a medium flame for 30 seconds, while striirng continuously.
  8. Add the fried paneer cubes, soya sauce, chilli sauce and vinegar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  9. Serve immediately garnished with spring onion greens.

    Batter for chilli paneer

    1. To prepare batter to coat paneer for chilli paneer, in a deep bowl take plain flour.
    2. Add cornflour.
    3. Add salt.
    4. To prepare batter to coat paneer for chilli paneer, in a deep bowl take plain flour.
    5. Whisk it well and keep aside.

    Frying cottage cheese

    1. Add the paneer cube sin the prepared batter.
    2. Toss it gently.
    3. Deep-fry over a high flame till the paneer is light brown in colour from all the sides. To make it healthier, you can shallow-fry the paneer instead of deep-frying. Avoid over-frying paneer on medium or low heat for a long period of time or else it will turn rubbery and chewy.
    4. Drain on absorbent paper and keep aside. If the paneer pieces are stuck with each other, you can separate them at this stage.

    How to make chilli paneer

    1. To prepare paneer chilli dry, heat the oil in a broad non-stick pan or a wok. We have used regular vegetable oil but, if possible use toasted sesame oil to make chilli paneer recipe more flavorful.
    2. Once the oil is hot, add the green chillies. 
    3. Sauté on a medium flame for a few seconds.
    4. Add the ginger.
    5. Add the garlic.
    6. Sauté on a medium flame for a few seconds.
    7. Add spring onion whites. You can also use regular onions if you do not have spring onions but spring onions always gives a better taste.
    8. Sauté on a medium flam for 1 minute.
    9. Add the salt and cook on a medium flame for 30 seconds.
    10. Add the fried paneer.
    11. Add soy sauce. We have used regular soy sauce but, you may use a combination of regular and dark soy sauce to give paneer chilli a darker shade and deepen flavor.
    12. Add chilli sauce. If you use red chili sauce, you will get a red colored paneer chili. Add vinegar if you wish to add slight acidity and ketchup for tanginess to the paneer chilli. Adjust the quantity according to your liking to make it as spicy as you want it. Before buying readymade sauces, check the labels carefully and avoid those with MSG and added colours. You can mix the sauces ahead of time in a small bowl. If you measure and add sauces one by one in the recipe. It will take some time and meanwhile, onion-capsicum will get cooked and becomes soft.
    13. Add the vinegar.
    14. Mix it well and cook on a medium flame for 1 to 2 minutes, while stirring it continuously.
    15. Garnish chilli paneer with the spring onion greens.
    16. Serve chilli paneer immediately as a starter or serve it as a side dish with Chinese fried rice, hakka noodles or schezwan fried rice.

    I just love this paneer chilly.. its lightly crunchy from outside, all the sauces are well coated.. to the paneer.. I enjoyed it having it just plain.. and having it immediately from the pan.. while it is hot..
