While freshly-made paste has an unbeatable charm of its own, you can also make it in advance and store, to make this dish quicker. This vegetable dish can be a meal by itself, or it can be served with kodri for a scrumptious lunch. Lemon Grass Spicy Vegetables, Healthy Diabetic Recipe recipe - How to make Lemon Grass Spicy Vegetables, Healthy Diabetic Recipe Tags Thai VegetablesSemi-Dry SubzisPanDeep PanDiabetic Sabzis Preparation Time: 15 mins   Cooking Time: 20 mins   Total Time: 35 mins     Makes 4 servings Show me for servings Ingredients To Be Ground Into A Paste2 whole dry kashmiri red chillies , deseeded and broken into pieces1 tsp grated ginger (adrak)1 tsp chopped garlic (lehsun)1/2 cup chopped onions2 tbsp waterOther Ingredients1/4 cup roughly chopped lemon grass (hare chai ki patti)1 tbsp coconut milk powder2 tsp oil1/4 cup vegetable stock2 tsp soy sauce salt to taste1/2 cup blanched broccoli florets1/2 cup diagonally cut and blanched french beans1/2 cup thinly sliced and blanched carrot1/2 cup sliced and blanched baby corn1/2 cup tofu (bean curd/ soya paneer) cubes1 tsp sugar substitute Method MethodCombine the lemon grass and ¼ cup of water and blend in a mixer till smooth.Strain through a sieve or muslin cloth, add the coconut milk powder and keep aside.Heat the oil in a deep non-stick pan, add the prepared paste and sauté on a medium flame for 5 to 7 minutes, while stirring continuously.Add the vegetable stock, soya sauce and salt, mix well and simmer for 5 minutes.Add the broccoli, french beans, carrots, baby corn and tofu, mix well and simmer for 2 to 3 minutes.Add the lemon grass-coconut liquid, mix well and simmer for 2 minutes.Finally add the sugar substitute and mix well.Serve hot.Disclaimer:Disclaimer:It is highly recommended that this recipe be relished by diabetics only occasionally and in small quantities.
