  1. To make peri peri masala, combine the oregano and chilli flakes in a mortar-pestle (khalbhatta) and powder them coarsely.
  2. Transfer it into a deep bowl.
  3. Add all the remaining ingredients to the deep bowl and mix well.
  4. Transfer the peri peri masala into an air-tight container. Its stays fresh upto 1 month when refrigerated.
  5. Use the peri peri masala as required.

How to make Peri Peri masala:

  1. To make peri peri masala recipe | piri piri spice mix| Indian style peri peri | first take a mortar-pestle and add the oregano into it. We have used dried and roasted oregano which is easily available in most grocery stores.

  7. Furthermore, add the cardamom powder. Use it carefully, as it is one of the most expensive spices using in Indian cuisine.
  8. Add the ginger powder. It has an off white colour, strong aroma and slightly pungent flavour.
  9. Finally, add the powdered sugar to balance the strong flavours of the  Peri Peri masala.
  10. Add the black salt. Also called as sanchal, it gives a distinct flavour which is unique when compared to the table salt. 
  11. Finally add the salt to  peri peri masala | piri piri spice mix| Indian style peri peri |.
  12. Mix all the ingredients of the Peri Peri Masala well with the help of a spoon.
  13. Transfer the peri peri masala | piri piri spice mix| Indian style peri peri | into an air tight container and use as required. The shelf life of this  Peri Peri masala is about 1 month if kept refrigerated.

I use peri peri masala for marinating seafood also. I have added dhania and jeera powder to add more flavour to this recipe. To make it more colorful I use Spanish sweet paprika.

Peri peri masala.. Finally i have found the recipe.. Taste best and super yumm with french fries, makhanas.. and simple to make.. I have made this in double the quantity and stored it.. for my future use.. Thank you for the recipe.
