Spread ¼ cup of onions, ¼ cup of tomatoes, ¼ cup of capsicum, ¼ tsp of garam masala, ½ tsp of chilli powder and little salt evenly over it and press it lightly using a spatula. Cook on a medium flame for 2 to 3 minutes. Pour 1/3 cup of batter over the vegetables, spread it evenly using a big spoon to make a thin even layer. Turnover, tap gently and cook on a medium flame for 3 to 4 minutes. Spread 1 tsp of butter evenly over it. Trim off the extra batter and vegetables from the circumference to get a neat circular shape. Turnover once again and again cook on a medium flame for 1 minute. Spread 1 tsp of butter evenly over it, turn over and cook on a medium flame for another 1 minute. Finally turn and cut into 6 equal pieces. Serve the uttapam sandwich immediately garnished with ¼ cup of cheese. Repeat steps 2 to 15 to make 3 more uttapam sandwich.

For The Uttapam Sandwich
3 1/2 cups thick dosa batter
8 tsp green chutney
8 tsp red chutney

salt to taste

  1. To make the uttapam sandwich, heat a non-stick tava.
  2. Grease it with ½ tsp of butter. Butter for greasing is used to season the tava and form a layer that helps in easy removal of the uttapa after cooking. This initial greasing is done only once before making the uttapa.
  3. Sprinkle little water on the tava.  If the water is not sprinkled, the excess fat will make the spreading of uttapa difficult.
  4. Wipe it using a clean muslin cloth. This is to clean and make the tava ready for spreading the batter.
  5. Pour ½ cup of the dosa batter on the tava. This is approximately 2 ladleful. This dosa batter has to be very thick. In case if you have purchased the dosa batter from the market and you find it isn’t thick as required, add some rice flour to it and mix it very well till no lumps remain.
  6. Spread the dosa batter in a circular motion using a deep spoon to make a 175 mm. (7") thick uttapa. This will become the bottom layer of the sandwich uttapa.
  7. Let it cook for 30 seconds. This minimum cooking time is required for the utappa to cook slightly from top so that the chutney could be easily spread. A little patience at this step is a must.
  8. Place 2 tsp of green chutney in the centre. You can make a spicy coriander or minty coriander chutney. This chutney should not be very thick nor very runny. It should be just enough thick to spread well. Also try and use fresh chutney for best results.
  9. Place 2 tsp of red chutney over it. This is garlic and Kashmiri red chilli chutney. This gives the sandwich uttapa its red colour in the center layer.
  10. Spread both the chutney evenly over it.
  11. Now spread 1 tsp of butter over the chutney. This is to enhance the taste of the veggies which will be added in next step.
  12. Spread ¼ cup of onions evenly over it.
  13. Follow it by spreading ¼ cup of tomatoes over it. They lend a juicy and slight tangy flavour to the sandwich uttapa.
  14. Finally add the last veggie – capsicum. This is a must to get the necessary crunch.
  15. Sprinkle ¼ tsp of garam masala. This lends a truly Indian touch to the veggies.
  16. Sprinkle ½ tsp of chilli powder for that little spice.
  17. Finally sprinkle little salt evenly over it.
  18. Press it very lightly using a spatula or any flat spoon so that the chutney and the veggies stick to the batter well.
  19. Cook on a medium flame for 2 to 3 minutes. This is to evenly cook the bottom layer till light brown in colour.
  20. Pour 1/3 cup of batter over the vegetables. This is approximately 1½ ladleful This top layer has less batter as compared to the bottom layer of uttapa so that flipping the sandwich uttapa becomes easier.
  21. Spread the batter evenly on top of veggies using a big spoon to make a thin even layer. While spreading the batter, it is suggested to leave 1 cm from the circumference as after turning over the batter spreads more. We would suggest to use a spoon at this stage to spread the batter as a flat ladle makes it difficult to spread the batter over the veggies.
  22. Turnover, tap gently and cook on a medium flame for 3 to 4 minutes till light brown in colour. This is to cook the top layer of the sandwich uttapa well.
  23. Spread 1 tsp of butter evenly on top.
  24. Trim off the extra batter and vegetables from the circumference using a sharp flat laddle to get a neat circular shape. Discard this trimmed of batter and veggies.
  25. Turnover once again and again cook on a medium flame for 1 minute till it turns golden brown in colour. This is the final stage of cooking for the bottom layer.
  26. Again spread 1 tsp of butter evenly on top.
  27. Turnover and cook on a medium flame for another 1 minute. This is the final stage of cooking for the top layer. Cook till it turns golden brown in colour.
  28. Finally turn once more to get the top layer up.

  29. Cut into 6 equal pieces using a sharp knife.
  30. Garnish with ¼ cup of cheese. This is for all cheese lovers to enjoy Cheese Sandwich Uttapa.
