Sev Tameta is an easy to make, sweet-tangy Gujarati subzi made by tempering tomatoes with cumin seeds and curry leaves.

Deep-fried vermicelli made using gram called as sev is added to give a crispy texture to the subzi. Add the sev just before serving to avoid them turning soft.

Also, this subzi is made without onions and garlic so, even Jains can relish it.

Serve it with warm rotlis or rotla.

  1. Heat the ghee in a deep non-stick pan, add the cumin seeds and curry leaves and sauté on a medium flame for 30 seconds.
  2. Add the tomatoes, chill powder, jaggery, salt and 1 cup of water, mix well and cook on a medium flame for 8 to 10 minutes, while stirring occasionally.
  3. Switch off the flame, add the coriander and lemon juice and mix well.
  4. Just before serving, re-heat the subzi, add the sev and mix well.
  5. Serve immediately.
