  1. To make achari chana pulao, blend the mango pickle in a mixer to a coarse paste. Keep aside.
  2. Clean, wash and soak the rice for 10 minutes. Drain and keep aside.
  3. Heat the ghee in a pressure cooker, add the fennel seeds, mustard seeds, fenugreek seeds, nigella seeds, big cardamom, cumin seeds and asafoetida and sauté on a medium flame for a few seconds.
  4. When the seeds crackle, add the onions and sauté on a medium flame for 1 to 2 minutes.
  5. Add the ginger-garlic paste, kabuli chana, turmeric powder, chilli powder, garam masala, salt and the prepared pickle paste, mix well and cook on a medium flame for 1 minute.
  6. Add the rice, mix well and cook on a medium flame for 1 minute.
  7. Add the 2½ cups hot water, mix well and pressure cook for 2 whistles.
  8. Allow the steam to escape before opening the lid.
  9. Serve achari chana pulao hot garnished with coriander.

  2. To begin making the achari chana pulao, pick, clean and wash around 1 1/4 cup of rice thoroughly. You can use any variety of rice. 
  3. Soak in enough water for 10 minutes. Cover with a lid and keep aside.
  4. Drain the rice with the help of a strainer.
  5. To prepare pickled Kabuli chana pulao, heat the ghee in a pressure cooker. 
  6. When the ghee is hot, add the fennel seeds. 
  7. Add mustard seeds.
  8. Add fenugreek seeds.
  9. Add nigella seeds.
  10. Add big cardamom.
  11. Add cumin seeds.
  12. Add asafoetida and sauté on a medium flame for a few seconds or until you get a nice aroma.
  13. When the seeds crackle, add onions.
  14. Mix well and sauté on a medium flame for 1 to 2 minutes or until onions are translucent.
  15. Add the ginger-garlic paste.
  16. Add the soaked and boiled kabuli chana.
  17. Add turmeric powder.
  18. Add chilli powder.
  19. Add garam masala.
  20. Add salt and the prepared pickle paste. It gives a slightly spicy and tangy flavor, justifying the word “achari” in our achari chana pulav.
  21. Mix well and cook on a medium flame for 1 minute.
  22. Add the rice.
  23. Mix well and cook on a medium flame for 1 minute.
  24. Add the 2½ cups hot water. It is important to use hot water since, we have drained the rice only for a few minutes & it will quicken the process of cooking. Also, different brands of basmati rice require a different amount of water. You can get the information about how much water is required on the backside of a rice packet to cook them perfectly. 
  25. Mix well and pressure cook for 2 whistles.
  26. Allow the steam to escape before opening the lid.
  27. Stir gently and check whether the rice grain is soft or not. If it is not soft, add some water and cook for some more time.
  28. Garnish with coriander. It gives a refreshing flavours. Our achari chana pulao | achari pulao | chickpea pulao | pickled kabuli chana pulao |  is now ready.

The best part of this recipe is that it is very quick. All we have to do is just put them all in the pressure cooker and whistle it. The common spices used in this recipe lends an amazing flavour to it. I carry it many times in my tiffin, when i am in a hurry to prepare something quick in the morning.
