  1. To make dahiwali toovar dal, clean, wash and soak the toovar dal in enough water in a deep bowl for 2 hours and drain well.
  2. Combine the toovar dal, salt, turmeric powder and 1 cup of water in a pressure cooker, mix well and pressure cook for 2 whistles.
  3. Allow the steam to escape before opening the lid. Keep aside.
  4. Combine the besan and curds in a small bowl, whisk well and keep aside.
  5. Heat a deep non-stick pan on a medium flame and when hot, add the cumin seeds and dry roast for about 30 seconds.
  6. Add the onions and dry roast for 1 to 2 minutes or till they turn light brown in colour. Sprinkle a little water if the mixture starts burning.
  7. Add the cooked dal, chilli powder, coriander powder and cumin seeds powder, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  8. Lower the flame, add the curds-besan mixture, ½ cup of water and little salt and mix well. Cook on a slow flame for another 1 to 2 minutes, while stirring occasionally.
  9. Serve the dahiwali toovar dal immediately garnished with coriander.

How to make Dahiwali Toovar Dal

  2. Soak the toor dal in enough water for 2 hours. You can also use hot water and soak it for 1 hour.
  3. After 2 hours, drain the dal using a strainer.
  4. Transfer to a pressure cooker.
  5. Add salt.
  6. Add turmeric powder.
  7. Add 1 cup of water.
  8. Mix well and pressure cook for 2 whistles. Allow the steam to escape before opening the lid. Different brands of cooker require different time to cook and also the number of whistles will vary depending on the flame.
  9. Give it a good stir and keep aside.

  19. Add coriander powder.
  20. Add cumin seeds powder.
  21. Mix well and cook on a medium flame for 1 minute, while stirring occasionally. This will help the masalas to blend very well with the dal.
  22. Lower the flame, add the curds-besan mixture. If you are a beginner, remove the pan from heat and then add curd mixture to it, one tablespoon at a time. Since we are not using any fat, the curd will help in giving a creamy texture to the dal making the dahiwali toovar dal appealing.
  23. Add ½ cup of water. Add more or less water as per the consistency you prefer. It should not be either thin or thick, just runny enough to mix easily with rice.
  24. Add a little salt. We have already added salt while boiling the dal so, be careful right now.

   Here we have added curds for additional flavour since the recipe is oil-free, however you can avoid the curds if you practice ayurvedic principles.

Real comfort food, and very easy and good. Great for a weeknight. I added some chopped, canned tomatoes and roasted red bell peppers (capsicums), which was delicious.

A good combination of dal with curds... Will try the same recipe with yellow moong dal also. I think that will taste equally good.
