  1. Put all the ingredients on a plate.
  2. Transfer all the ingredients except the turmeric and nutmeg powder in a broad non-stick pan and dry roast on a medium flame for 2 minutes.
  3. Switch of the flame, add the turmeric and nutmeg powder and mix well.
  4. Cool completely, and blend it in a mixer till smooth.
  5. Store the homemade biryani masala it in an air-tight container and use as required.

  6. Add caraway seeds.
  7. Add 1 tbsp of mace.
  8. Add 2 sticks of cinnamon. Check for hidden worm or mold inside the dalchini.
  9. Add cloves.
  10. Add black cardamom.
  11. Add star anise.
  12. Add black peppercorns.
  13. Add cardamoms.
  14. Add fennel seeds. Always make use of fresh spices else the biryani masala will not last long and won’t have that essence.
  15. Dry roast on a medium flame for 2 minutes or until aromatic. We are dry roasting just to remove moisture from spices if any and not for changing the colour and toasting them.
  16. Switch off the flame, add the turmeric.  For best results, always prepare spice blends in small quantities but, if preparing in large quantity then dry roast each whole spice separately rather than roasting everything together.
  17. Add nutmeg powder.
  18. Mix well and remove on a plate.
  19. Cool completely and transfer to a mixer jar.
  20. Blend it in a mixer till smooth and our biryani masala powder is ready.

I tried a biriyani recipe that used garam masala. I made this and used in place of the garam masala and it was a definite improvement imo. I love preparing my own fresh masalas. Thank for this one.

It is good to restrict copy and paste, but I cannot copy the ingredients to buy at the market, so this recipe is useless.
