Method

  1. Peel and roughly dice the sweet potato.
  2. Pressure cook for 2-3 whistles or until soft.
  3. Drain the water and set aside in a bowl.
  4. Boil the carrots for a few minutes, making sure that they remain crunchy.
  5. Add the boiled carrots to the sweet potato.
  6. Scoop out the seeds from the tomatoes and roughly chop the flesh.
  7. In a salad bowl, place the lettuce leaves.
  8. Mix together the sweet potatoes, carrots, boiled chickpeas and tomatoes.
  9. Add them in the bowl over the lettuce leaves.
  10. Blend together the dressing ingredients and add them over the salad.
  11. Garnish with walnuts, raisins and onion rings.
