Cook each roti very lightly on a tava (griddle) and keep aside. Then make the stuffing. Heat the oil in a non-stick pan; add the ginger, garlic and onions and sauté on a medium flame till the onions turn translucent. Add the tomatoes, turmeric powder, chilli powder and coriander powder, mix well and cook on a medium flame for 4 to 5 minutes, stirring continuously. Add the rajma, curds, coriander and salt, mix well and cook on a medium till the mixture dries up, stirring continuously. Divide the filling into 4 equal portions and keep aside. Then spread chilli garlic chutney on a roti, place a portion of stuffing, spread ¼ of the dressing and finally sprinkle some spring onion greens and roll it tightly. Serve immediately.

Ingredients


For The Roti
1 cup whole wheat flour (gehun ka atta)
1 tbsp oil
a pinch of salt
whole wheat flour (gehun ka atta) for rolling

For The Rajma Filling
1 1/2 tbsp oil
1 tsp finely chopped ginger (adrak)
1 tsp finely chopped garlic (lehsun)
1/2 tsp turmeric powder (haldi)
2 tsp chilli powder
1 tbsp coriander (dhania)
1/4 cup finely chopped onions
1 1/2 cups finely chopped tomatoes
1 tbsp tomato ketchup
1 cup soaked and boiled rajma (kidney beans) , lightly mashed
2 tbsp chopped coriander (dhania)
salt to taste

To Be Mixed Together Into A Curd Dressing
1/2 cup curd (dahi) , whisked
1/2 cup grated cucumber
1/2 cup grated carrot
salt to taste

Other Ingredients For Rajma Wrap
2 tsp chilli-garlic chutney
4 tbsp finely chopped spring onion greens

Method
For the roti

    For the roti
  1. Combine all the ingredients in a bowl and knead into a soft dough using enough water. Keep aside.
  2. Divide the dough into 4 equal portions and roll out each portion into 200 mm. (8”) diameter circle using a little flour.
  3. Heat a non-stick tava (griddle) and lightly cook the rotis on both the sides. Keep aside.

For the chatpata rajma filling

  1. Heat the oil in a broad non-stick pan, add the ginger and garlic and sauté on a medium flame for a few seconds.
  2. Add the turmeric powder, chilli powder and coriander-cumin seeds powder and sauté on a medium flame for a few seconds.
  3. Add the onions and sauté on a medium flame for 1 to 2 minutes.
  4. Add the tomatoes and 2 tbsp water and sauté on a medium flame for 3 to 4 minutes, while stirring occasionally.
  5. Add the tomato ketchup and rajma, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  6. Add the coriander and salt, mix well and cook on a medium flame for 1 minute. Keep aside.

How to proceed to make chatpata rajma wrap

    How to proceed to make chatpata rajma wrap
  1. Just before serving, warm a roti on a non-stick tava.
  2. Place the roti on a clean dry surface and spread 1/2 tsp of chilli-garlic chutney evenly over it.
  3. Place 1/4th of the prepared chatpata rajma filling in a row in the centre of the roti and spread 1/4th of the curd dressing over it.
  4. Arrange 1 tbsp of spring onion greens over it and roll up the roti tightly.
  5. Repeat with the remaining ingredients to make 3 more chatpata rajma wraps.
  6. Serve the chatpata rajma wrap immediately.

  4. Slowly, add water little by little.
  5. Mix it well with your hands. Gather the flour from all sides and if it’s too floury, you will need more water.
  6. Knead it into a soft dough for at least 2 minutes. We have used approximately ⅓ cup of water. 
  7. Apply a little oil on the surface of the dough so that it doesn’t become dry. Cover the dough with a wet muslin cloth. You can also use cling film or a plate to cover.
  8. Keep aside for 15 minutes. Giving rest to the dough improves the texture and the rotis will be softer and fluffier.
  9. Divide into 4 equal portions.
  10. Take a portion of the dough between your palm, flatten it and place it on a rolling board.
  11. Sprinkle a little flour on your rolling board and roll out each portion of the dough into a thin circle of 200mm. (8”) diameter.
  12. Heat a non-stick tava (griddle) on a high flame and place the roti on it. Reduce the flame when it becomes hot enough. You can even check by drizzling a few drops of water on the tava, if it sizzles you are ready to make your roti for wraps and rolls. 
  13. Cook till small blisters appear on the surface. Turn over the roti and cook for a few more seconds on a medium flame till half cooked.
  14. Take the roti (roti for wraps and rolls) off the heat and repeat with the remaining dough portions to make 3 more rotis.

  2. Drain the rajma using a strainer and discard the water.
  3. Take a pressure cooker and add the rajma into it.

  6. Cook the rajma for 2 whistles.
  7. Drain the cooked rajma with the help of a strainer.
  8. Transfer it to a clean and dry plate and mash lightly with the help of a potato masher.

  10. Now, add the garlic as well. Both ginger and garlic will give an amazing taste to the filling of the Chatpata Rajma Wrap.
  11. Mix well and sauté on a medium flame for a few seconds.

  15. Also add the coriander-cumin seeds powder. This powder is made by dry roasting and grinding whole coriander and cumin seeds which results in a better flavor.
  16. Mix well and sauté on a medium flame for a few seconds or till the raw taste goes. If the masalas are burning, you can add 1 tbsp of water to the pan.
  17. Add the tomatoes now. This will give a nice consistency to the filling and not make it too dry. Also, add 2 tbsp of water to prevent burning.
  18. Mix well and sauté on a medium flame for 3 to 4 minutes, while stirring occasionally.
  19. Add the tomato ketchup for a sweet and slightly tangy taste to the filling of the Chatpata Rajma Wrap. Its completely optional you can skip it to make the wrap healthier. 
  20. Add the rajma now. This Rajma has been soaked, boiled and lightly mashed.
  21. Add the salt now.
  22. Mix well and cook on a medium flame for 1 to 2 minutes till everything is mixed well, while stirring occasionally.

This recipe would never fail your taste buds and is a complete meal by itself , filled with protein and vegetable nutrition . I did some addition to it by making it palak roti and adding lettuce leaves with coriander chutney. Tastes good either ways

A very filling snack for kids after school... My daughter enjoyed it...For her i avoided the chilli garlic chutney and insetad replaced it with a little ketchup.
