Tweet Recipe Description for Herbed Potato Soup Preparation Time: 10 minsCooking Time: 20 mins Makes 4 servings Show me for servings Ingredients 2 cups peeled potato cubes2 tsp butter1/4 cup thinly sliced onions salt and freshly ground black pepper to taste1 tsp dried mixed herbsFor The Garnish2 tsp grated carrot2 tsp finely chopped parsley1 tsp dried mixed herbs Method Heat the butter in a pressure cooker, add the onions and sauté on a medium flame for 2 to 3 minutes.Add the potatoes and cook on a medium flame for 3 to 4 minutes.Add 2 cups of water, mix well and pressure cook for 2 whistles.Allow the steam to escape before opening the lid.Allow the mixture to cool completely and then blend in a mixer to a smooth mixture.Pour the potato-onion mixture into a deep kadhai, add the salt and mixed herbs, mix well and cook on a medium flame for 1 minute.Add approx. ¼ cup of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.Add the pepper powder, mix well and cook on a medium flame for 1 minute.Serve hot garnished with carrots, parsley and mixed herbs.
