With mild scents of olive oil and the strong aroma of toasted sesame, Lavash is a bread par excellence. Bake them fresh, allow them to cool and turn crispy, then serve with a cheesy or tangy accompaniment. The taunting aroma of freshly baked bread is sure to make one overeat!

Lavash recipe - How to make Lavash

Ingredients

3/4 cup plain flour (maida)
1/2 tsp dry yeast
a pinch of sugar
salt to taste

Other Ingredients
plain flour (maida) for rolling
1 1/2 tsp black sesame seeds (kala til)
olive oil for brushing

Method
    Method
  1. Combine the dry yeast and sugar with ¼ cup of warm water in a bowl, mix well and cover with a lid and keep aside for 5 minutes.
  2. Combine the plain flour, dry yeast-water mixture and salt in a deep bowl, mix well and knead into a soft dough without using any water.
  3. Cover with a lid and keep aside for 15 minutes.
  4. Divide the dough into 3 equal portions.
  5. Roll a portion into a 175 mm. (7”) diameter circle using a little plain flour for rolling and brush a little olive oil over it.
  6. Sprinkle ½ tsp of black sesame seeds evenly over it and cut it into 12 equal triangles.
  7. Arrange them on a greased baking tray and bake in a pre-heated oven at 180°c (360°f) for 16 to 18 minutes or till they turn golden brown in colour. Allow it to cool slightly.
  8. Repeat steps 5 to 7 to make 24 more lavash.
  9. Store in an air-tight container and use as required.

  2. Add a pinch of sugar.
  3. Add ¼ cup of warm water.
  4. Mix well.

  1. In a deep bowl put 3/4 cup  whole wheat flour (gehun ka atta). Whole wheat flour has a slightly nutty flavor that adds depth and complexity to the lavash.  Whole wheat flour is excellent for diabetics as they will not shoot up your blood sugar levels as they are a low GI food.
  2. Add dry yeast-water mixture.
  3. Add 1 tsp chilli powder.
  4. Add salt to taste. We added xx tsp salt.
  5. Mix well.
  6. Knead into a soft dough without using any water.
  7. Cover with a lid and keep aside for 15 minutes.

The taste is good. Black sesame had to be mixed with flour or atleast when it is half rolled into circle , otherwise black sesame just comes out. Also baking time of 13- 15 minutes is suggested.
