freshly ground black pepper (kalimirch) to taste

  1. To make fasting potato chips, place the indori potatoes on a clean, dry surface and peel the skin of the potatoes.
  2. Slice the potatoes thinly using a potato slicer and soak them in a bowl full of water to remove excess starch.
  3. Heat the oil in a deep non-stick pan and add the potato slices one by one.
  4. Deep-fry a few slices on a medium flame till they turn light golden in colour from all the sides.
  5. Drain on an absorbent paper. Sprinkle a little rock salt and black pepper (kalimirch) to taste.
  6. Toss it well and serve farali potato wafers or store in an air-tight container.

These potatoes are popularly used to make Chips and French fries. They are high in starch content and have least amount of moisture in them which make French fries very crispy. They look like normal potatoes but the peels of the potatoes are pinkish in color, that’s how you select potatoes for making Chips.

  3. Slice the potatoes thinly using a potato slicer. Thinly sliced potatoes cook more evenly than thick slices.

but oil should be what temperature? i think its important because too hot or too cold affects the results.

   Hi, always fry anything when the oil is hot but not piping hot, to test of the oil is hot enough put a small piece of food if it comes up the oil is ready for use...

potato wafer.. who do not like wafers.. and these were just the perfecct ones.. with crunchy texture, and mild spice of the black pepper. Now i would prefer making these wafers.. and store it in a container.. Thank you for the recipe..
