Ingredients


For Semiya Upma
2 cups rice vermicelli (seviyan)
2 1/2 tsp oil
salt to taste
1 tsp mustard seeds ( rai / sarson)
2 tsp urad dal (split black lentils)
1/2 cup finely chopped onions
2 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
1/2 tbsp lemon juice

For Serving With Semiya Upma
coconut chutney

Method

For semiya upma

  1. To make {span class="bold1"}semiya upma{/span}, combine the vermicelli, ½ tsp of oil, salt and 2 cups of hot water in a bowl and mix well. Cover and keep aside for about 8 to 10 minutes or till the vermicelli turns soft. Drain and keep aside.
  2. Heat the remaining 2 tsp of oil in a broad non-stick pan and add the mustard seeds and urad dal.
  3. When the seeds crackle, add the onions and green chillies and sauté on a medium flame for 1 to 2 minutes.
  4. Add the vermicelli, coriander, lemon juice and a little salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  5. Serve the {span class="bold1"}semiya upma{/span} hot with coconut chutney.
