How to make sev tameta nu shaak-
To prepare sev tameta recipe | Gujarati sev tameta nu shaak | sev tamatar | sev tamatar sabzi | heat the oil in a non-stick kadhai.

Once the oil is hot, add the cumin seeds.

Add asafoetida.

Add ginger. Traditionally, the sev tameta nu shaak does not have onion and garlic so, we have not added it. Sev tameta nu shaak is a popular Jain subzi.

When the seeds crackle, add the tomatoes.

Add turmeric powder.

Add coriander-cumin seeds powder.

Add chilli powder. Adjust the quantity of red chilli powder according to your taste to make it more or less spicy.

Add sugar. This will balance the tanginess of tomatoes and tamatar subji delicious.

Add salt.

Mix well and simmer for 8 minutes or till the tomatoes are soft while stirring occasionally.

Add 1 cup of water. If you want more gravy, add more water.

Mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Our Tamatar Sev Ki Sabzi is now ready!

Remove sev tameta | Gujarati sev tameta nu shaak | sev tamatar | sev tamatar sabzi | from the flame, add the sev and mix gently so the sev does not break. Make tamatar nu shaak at home as close to serving time as possible or else the sev will turn soggy. Use any thick besan sev which will not get disintegrated immediately after putting in the sabzi will work fine in this recipe. You can make the tomato gravy prior and just before serving, reheat, add sev and serve.
