Ingredients


For The Stuffed Apples
6 small apples
1/2 cup sugar
a few saffron (kesar) strands dissolved in 1 tbsp water

To Be Mixed Together For The Stuffing
1/4 cup crumbled paneer (cottage cheese)
1/4 cup chopped pistachios
2 tbsp powdered sugar

For The Rabri
1 ltr milk
500 gms sugar
a pinch saffron (kesar) strands

Method

  1. Combine the sugar and 1½ cups water in a deep pan, mix well and bring to boil, while stirring continuously.
  2. Add the saffron mixture and mix well.
  3. Remove from the flame and keep aside.
  4. Core the apples and scoop the insides and discard the inside part.
  5. Add the apples to the syrup, mix well and simmer for 5 to 6 minutes or till the apples become soft, turning them twice in between.
  6. Remove and drain the apples and keep aside.
  7. Divide the filling mixture into 6 equal portions and stuff each portion in one apple. Keep aside.

For the rabri

  1. Heat the milk in a broad non-stick pan and simmer while stirring continuously, till the milk is reduced to 1/3rd.
  2. Add the sugar and saffron, mix well and simmer for more 15 minutes or till the sugar is completely dissolved and the milk becomes thick and creamy.
  3. Remove from the flame and keep aside.

How to proceed

  1. Just before serving, pour the rabri in a non-stick pan, place the stuffed apples carefully and heat on a medium flame to make the rabri warm.
  2. Serve immediately
