While the mayonnaise is the highlight of this vegetable mayonnaise grilled sandwich, the unusual combination of vegetables such as potatoes, coloured capsicum, sweet corn and carrot marks the stuffing. Dried herbs such as paprika and oregano make the stuffing truly irresistible. Further, the addition of cheese adds a creamy texture to the stuffing.

Ingredients


For Veg Mayo Grilled Sandwich
1 tbsp butter
1 cup boiled and thinly sliced potatoes
1/4 cup finely chopped onions
3/4 cup finely chopped coloured capsicum
1/4 cup boiled sweet corn kernels (makai ke dane)
1/2 cup grated carrot
1/2 tsp black peppercorns (kalimirch) powder
1 tbsp dry red chilli flakes (paprika)
1 tbsp dried oregano
salt to taste
1/2 cup grated processed cheese
1/2 cup mayonnaise
16 bread slices
8 tsp butter for spreading
8 tsp green chutney
8 tbsp butter for cooking

Method

For veg mayo grilled sandwich

  1. To make {span class="bold1"}veg mayo grilled sandwich{/span}, in a broad non-stick pan, heat butter, add onions, potatoes, coloured capsicum, grated carrot, boiled corn, black pepper, chilli flakes, oregano and salt and sauté on a medium flame for 2 minutes.
  2. Transfer into a deep bowl, add grated cheese and mayonnaise and mix well.
  3. Divide the stuffing into 8 equal portions.
  4. Take 2 bread slices and place them on a clean, dry surface and apply 1 tsp butter and 1 tsp green chutney on each slice of the bread.
  5. Put a portion of the stuffing on one slice and cover it with the slice with the buttered-chutney side facing downwards and press it lightly.
  6. Heat a grill toaster, grease the grill toaster using 1 tbsp butter and place the sandwich in the grill toaster and cook on a medium flame, till it turns brown and crisp from both the sides.
  7. Remove and cut into half using sharp knife.
  8. Serve the {span class="bold1"}veg mayo grilled sandwich{/span} immediately with tomato ketchup and french fries.
