Seekh kebabs are very rich and have been a favorite with royal families of India for centuries. Traditionally seekh kebabs are made with minced meat that has been seasoned and pressed onto a tandoor stick before being lowered into the hot tandoor that makes it a perfect golden brown. Recipe Description for Indian Veg Seekh Kebab Without Tandoor Or Oven

Makes 8 servings


Ingredients


For Veg Seekh Kebab
1 tbsp oil
1 tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
1 tsp green chilli paste
1/4 cup chopped onions
1/2 cup finely chopped carrot
1/2 cup finely chopped green capsicum
1/2 tsp freshly ground black pepper (kalimirch)
1 1/2 tsp chilli powder
1 tsp chaat masala
1 tsp coriander-cumin seeds (dhania-jeera) powder
1 cup boiled and grated potatoes
1/2 cup grated paneer (cottage cheese)
1/4 cup grated processed cheese
5 tbsp bread crumbs
1/4 cup fried onions , lightly crushed
2 tbsp finely chopped mint leaves (phudina)
2 tbsp finely chopped coriander (dhania)
1 tbsp cornflour
salt to taste
1 medium piece charcoal
1 tbsp ghee
3 tbsp oil for greasing
3 tbsp oil for cooking

For Serving With Veg Seekh Kebab
green chutney
tomato ketchup

Method

For veg seekh kebab

  1. To make {span class="bold1"}veg seekh kebab{/span}, in a non-stick broad pan, heat oil, add garlic paste, add ginger paste, add green chilli paste and onions and sauté on a medium flame for 1 minute.
  2. Add carrot, add capsicum and sauté on a medium flame for sauté for 2 minutes.
  3. Add black pepper powder, coriander-cumin seeds powder, chat masala, chilli powder and cook on a medium flame for 1 minute.
  4. Transfer the mixture to another bowl and cool slightly. Add potatoes, paneer, cheese, breadcrumbs, fried onions, mint leaves, coriander, cornflour and salt. Mix well.
  5. Combine and form a dough and place it on the sides of the plate. Now give smoke of live charcoal for 2-3 mins and put 1 tbsp ghee over it cover the bowl and keep aside for 3 minutes.
  6. Mix the dough well, make 8 equal portions and make kebabs using skewers.
  7. Now heat a grill pan with 1 tbsp oil. Place 3 kebabs on it and cook using 1 tbsp oil till golden brown in colour form both the sides.
  8. Repeat step 7 to cook more kebabs.
  9. Serve the {span class="bold1"}veg seekh kebab{/span} immediately with green chutney and tomato ketchup.
