Add the prepared tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Add the sugar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Store the pizza sauce in an air- tight container and use as required. Then make bhakris. Combine bajra flour, jowar flour, oil and salt and knead into a firm dough using water. Divide the dough into 6 portions and roll into a 3-inch diameter circle by rolling using a rolling board and rolling pin. Cook them on a hot tava until crisp on both sides while pressing with a muslin cloth of a khakhra press. Spread 1 tbsp of the pizza sauce and top with 1½ tbsp of cheese evenly over it. Cover it with a lid and cook on a slow flame for 3 to 5 more minutes. Cool slightly and serve immediately.

For The Dough
1/2 cup bajra (black millet) flour
1/2 cup jowar (white millet) flour
2 tsp oil
salt to taste

For Pizza Sauce (makes 1 Cup)
6 large tomatoes
1 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
1/2 cup finely chopped onions
1/2 tsp dried oregano
1 tsp dry red chilli flakes (paprika)
2 tbsp tomato ketchup
1 tsp chilli powder
salt to taste
1/2 tsp sugar

9 tbsp grated processed cheese or low fat paneer (cottage cheese)

  1. Combine all the ingredients in a deep bowl, mix well and knead into a firm dough using enough water.
  2. Cover with a lid and keep aside for 10 minutes.

  2. Roll out a portion into a 75 mm. (3") using a rolling board and rolling pin.
  3. Heat a non-stick tava (griddle) and cook it on a slow flame till pink spots appear on both the sides.
  4. Continue cooking the bhakhri on a slow flame, while pressing with a khakhra press or folded muslin cloth till it turns crisp and golden brown in colour from both the sides.
  5. While on the tava (griddle), spread 1 tbsp of the pizza sauce and top with 1½ tbsp of cheese evenly over it. Cover it with a lid and cook on a slow flame for 3 to 5 minutes.
  6. Repeat steps 2 to 5 to make 5 more bhakhri pizzas.
  7. Cool the bhakhri pizza slightly and serve immediately.

  1. What is bhakri pizza made off?  bhakri pizza is made from homemade pizza sauce which is topped on gluten free bhakri. We have finally used paneer to substitute the cheese during cooking.

  1. For the Pizza Sauce, clean, wash and remove the eyes of the tomatoes. You do not want them in your pizza sauce. 
  2. Make a criss-cross on the base of each tomato using a sharp knife. Make sure you use tomatoes that are firm and red in colour. 
  3. Meanwhile, keep the water for boiling in a deep pan. 
  4. Place the tomatoes in boiling water for 2 to 3 minutes or till the skin begins to peel. 
  5. Drain the tomatoes using a strainer. 
  6. Cool slightly and peel, they will peel easily because of the criss cross that was made at the base of the tomatoes. 
  7. Cut them into 2 and deseed them using a sharp knife. Removing the seeds not only ensures a smooth puree, but also ensures that the sourness of the tomatoes reduces. 
  8. Roughly chop them. 
  9. Transfer to a blender. 
  10. Blend in a mixer till smooth. Use a big mixer jar and not the small one as when you will blend it will overflow. Keep aside.
  11. In a broad non-stick pan, heat the olive oil. Olive oil is used in all Italian recipes as it taste really great. Add the garlic. You can also use the paste if you have it ready but finely chopped always gives a better taste and good mouthfeel. If you are jain, you can learn how to make Jain Pizza Sauce.
  12. Sauté on a medium flame for a few seconds. 
  13. Add the onions.
  14. Sauté on a medium flame for 1 to 2 minutes. 
  15. Add the prepared tomato pulp. 
  16. Add the oregano. If you wish you can also add mixed herbs. 
  17. Add the chilli flakes. 
  18. Add the tomato ketchup. This gives a little colour and sweetness to the sauce. 
  19. Add the chilli powder and salt. Chilli powder is added to give more colour and spiceness. 
  20. Mix the Pizza Sauce (Quick Pizza Sauce) well and cook on a medium flame for 2 to 3 minutes stir it in between. Make sure you are careful of the spluttering that happens of the tomatoes. 
  21. Add the sugar to the pizza sauce and mix well. 
  22. Cook the pizza sauce on a medium flame for 1 to 2 minutes, while stirring occasionally. 
  23. Store the Pizza Sauce (Quick Pizza Sauce) in an air- tight container and use as required. Stays fresh in the fridge for 4 days and freezer for atleast 3 months.

  2. Add 1/2 cup jowar (white millet) flour.

  6. Add water gradually to make a firm dough. The dough should not be soft.
  7. This is the firm dough.
  8. Cover with a lid and keep it aside for 10 minutes.

  7. Cook till golden brown in colour from both the sides.
  8. While on the tava (griddle), put 1 tbsp of the pizza sauce on the bhakri.
  9. Spread 1 tbsp of the pizza sauce on the bhakri with the back of the tablespoon.
  10. Top with 1 1/2  tbsp of cheese or paneer evenly over it.
  11. Cover it with a lid and cook on a slow flame for 3 to 5  minutes. Repeat again to make the remaining bhakri pizzas.

  1. To make baked bhakri pizza, you are going to use the bhakri and pizza sauce as given above. Put 6 bhakri's in a oven tray.
  2. Top with 1 tablespoon homemade pizza sauce. 
  3. Spread pizza sauce with the back of the tablespoon.
  4. Top with 1 1/2 tablespoons of paneer over each bhakri.
  5. Bake in a pre heated oven at 200 C for 10 to 12 minutes.
  6. Our baked bhakri pizza is ready.
  7. Serve hot your baked bhakri pizza.

This bhakri pizza is a great alternative to regular plain flour base pizza. the gluten free bhakri is delicious and I really liked the paneer on top. It tastes just as good as normal pizza, but is relatively healthier. Wonderful recipe, would reccommend to all!

I’m on diet and my dietitian allowed me bhakri and any vegetables (subzi) I made this without cheese and tomato ketchup still tasted awesome!!! This is a fab and great alternate base to the plain flour pizza. The bhakri base turns crisp and the pizza sauce taste great over it.
