biryani masala powder recipe | homemade biryani masala | with 21 amazing images.

The perfect blend of spices for the perfect Biryani! biryani masala powder is an essential item in a typical Indian kitchen. Cooked with a mix of rice and veggies, biryani masala powder gives rise to an aromatic and flavourful Biryani that will steal everyone’s hearts.

Although biryani masala powder is readily available in stores, this homemade biryani masala version will easily outdo all these. To get this homemade biryani masala right take care not to over-roast the ingredients.

To make biryani masala powder you just need to roast them lightly to remove any moisture, and must ensure the ingredients do not change colour. If you are unsure of this, you can even keep them in the hot sun to dry. Also measure the quantity of ingredients in biryani masala powder properly to get the ideal mix of flavours.

Tips for the perfect biryani masala powder recipe. For best results, always prepare spice blends in small quantities but, if preparing in large quantity then dry roast each whole spice separately rather than roasting everything together.

You can also try making other Indian spice mixes like the Sambhar Masala and Homemade Tandoori Masala Powder.

How to make Biryani masala

  1. To make biryani masala powder recipe | homemade biryani masala | measure and assemble all the ingredients on a plate.
  2. Transfer all the ingredients in a  broad non-stick pan starting with Kashmiri red chillies. The stalk has been removed but we have kept them whole to get that heat from the seeds.
  3. Next add bay leaves. Wipe clean the bay leaves before using them.
  4. Add 3 tbsp of coriander seeds. Clean the spices for any stones or debris before adding them in the Biryani masala.
  5. Add cumin seeds. If you are running short of time and need to prepare the biryani masala immediately then make use of chilli powder, coriander powder and cumin powder instead of the whole spices.
  6. Add caraway seeds.
  7. Add 1 tbsp of mace.
  8. Add 2 sticks of cinnamon. Check for hidden worm or mold inside the dalchini.
  9. Add cloves.
  10. Add black cardamom.
  11. Add star anise.
  12. Add black peppercorns.
  13. Add cardamoms.
  14. Add fennel seeds. Always make use of fresh spices else the biryani masala will not last long and won’t have that essence.
  15. Dry roast on a medium flame for 2 minutes or until aromatic. We are dry roasting just to remove moisture from spices if any and not for changing the colour and toasting them.
  16. Switch off the flame, add the turmeric.  For best results, always prepare spice blends in small quantities but, if preparing in large quantity then dry roast each whole spice separately rather than roasting everything together.
  17. Add nutmeg powder.
  18. Mix well and remove on a plate.
  19. Cool completely and transfer to a mixer jar.
  20. Blend it in a mixer till smooth and our biryani masala powder is ready.
  21. The biryani masala powder | homemade biryani masala |will have such a texture.
  22. Store pulao masala in an air-tight container to retain the aroma and flavour and use as required. To increase the shelf life of biryani masala powder recipe | homemade biryani masala | store it away from humidity and sunlight. Also, make use of a clean and moisture-free spoon to get the required amount of masala everytime. You can use this biryani masala recipe to make delectable dishes like :
