Here is a soup that can perk you up even on a gloomy day. It is both flavourful and soothing, which works wonders to cheer up the soul.


This soup has neither corn flour nor cream, but is amazingly tasty. Wholesome milk gives the soup a balanced and rich flavour, which also providing you with calcium and protein.


Celery, on the other hand, gives you loads of calcium and vitamin A, which spells more goodness for pregnant women. A dash of pepper is all that’s needed to make the Celery Soup a very tasteful experience!

Ingredients

2 tsp butter
1/2 cup chopped onions
1 cup finely chopped celery (ajmoda) stalks
1/2 cup milk
salt and to taste

  1. Heat the butter in a deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes.
  2. Add the celery and sauté on a medium flame for 2 minutes.
  3. Add 1½ cups of water, mix well and cover with a lid and cook on a medium flame for 6 to 8 minutes, while stirring occasionally. Keep aside to cool.
  4. Blend in a mixer till smooth.
  5. Transfer the mixture into the same non-stick pan, add the milk, salt and pepper, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  6. Serve hot.

    Preparation for celery soup

    1. To prepare the cream of celery soup, wash and lightly peel the celery stalks.
    2. Place them on a chopping board and cut them finely. Celery is rich in vitamins A, K, and C, plus minerals like potassium and folate making the cream of celery soup a nutritious dish.
    3. Peel and roughly chop the onions and keep aside.

    How to make celery soup

    1. To prepare celery soup at home, heat the butter in a deep non-stick pan.
    2. Once the butter is hot and melted, add the onions. You can also toss in some garlic for an umami flavor.
    3. Mix well and sauté on a medium flame for 2 minutes until soft and translucent.
    4. Add the celery. Ensure to use good quality, light-colored, crisp celery that’s very fresh and full of flavor. We are just using the stalk and not leaves for the cream of celery soup. Chopping the celery finely will prevent fibrous texture.
    5. Sauté on a medium flame for 2 minutes. For a vibrant green color, add a handful of raw spinach if you like, or more parsley.
    6. Add 1½ cups of water. The liquid should be just enough to cover the veggies. Instead of water, you can make use of vegetable broth if available.
    7. Mix well and cover with a lid and cook on a medium flame for 6 to 8 minutes, while stirring occasionally or until tender enough that they can be easily pureed.
    8. Once cooked, keep aside to cool completely.
    9. Transfer to a mixer jar. If blending warm soup, fill mixer jar halfway, cover tightly with a lid and kitchen towel, hold it firmly and then blend from low to high mode to prevent a blender “explosion”.
    10. Blend in a mixer till smooth. You can even make use of a hand blender to grind the soup.
    11. Transfer the mixture into the same non-stick pan.
    12. Add the milk. Traditionally, it is made with butter and heavy cream but we are using milk for that creamy texture. If you are vegan, make use of cashew cream, almond or soy milk. You can add more or less milk to attain consistency of your desire but, generally, cream soups are thick.
    13. Add salt and pepper to season creamy celery soup. You can even flavor the soup with fresh basil or any other herbs of your choice like parsley, coriander, rosemary, sage.
    14. Mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Our cream of celery soup is ready.
    15. Pour the cream of fresh celery soup in a serving bowl and garnish with fresh cream. Serve celery soup hot.

    I doubled the amount of potatoes and added only quarter the given amount of milk and cornstarch. Also I used non-dairy milk. It has a delicate celery flavour with a light, thin consistency. I have eaten soup like this in restaurants when I was a small child and was never able to replicate the recipe before. Thank you.
