3 cups clear vegetable stock
1 cup spinach (palak) , torn into small pieces
1/2 cup chopped mushrooms (khumbh)
1/2 tbsp oil
1 tsp finely chopped garlic (lehsun)
1/2 tsp soy sauce
salt and freshly ground black pepper (kalimirch) to taste

For The Topping
1 tsp roasted sesame seeds (til)

  1. Heat the oil in a deep non-stick pan, add the garlic and sauté on a high flame for a few seconds.
  2. Add the spinach and mushrooms and sauté on a high flame for 1 minute.
  3. Add the clear vegetable stock, soya sauce, salt and pepper, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  4. Serve immediately topped with sesame seeds.

Clear soup with spinach and mushrooms... a great soothing soup with spinach and sauteed mushrooms.. mildly spiced up.. and sesame seeds gives a crunchy feel to the soup.. I have loved and enjoyed this soup a on a winter evening...

Nice healthy non spicy clear soup with the richness of spinach. My fussy 6 year old daughter loved it.
