1 packet hakka noodles
2 tsp oil
salt to taste
oil for deep-frying

  1. To make crispy fried noodles, combine the oil, salt and enough water in a deep non-stick pan and allow it to boil.
  2. Once it starts boiling, add the noodles and cook on a medium flame for 3 to 4 minutes, while stirring occasionally. Drain well, do not refresh it with water, keep aside and allow it to dry completely for 10 to 15 minutes.
  3. Heat the oil in a deep non-stick kadhai, add a few noodles at a time and deep-fry on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper and keep aside.
  4. Repeat step 3 to deep- fry the remaining noodles.
  5. Cool completely and gently break it into pieces.
  6. Store crispy fried noodles in an air-tight container and use as required.

To make the Crispy Fried Noodles

  2. Now add the salt. We add the salt at this stage as it not only helps the water come to a boil faster but also gives flavor to the noodles. 
  3. Let the water come to a rapid boil.
  4. Once it starts boiling, add the noodles. We have broken the noodle cake into 2 pieces to make the boiling easy and fast.
  5. Cook on a medium flame for 3 to 4 minutes, while stirring occasionally. The noodles should be cooked until they are al dente i.e. cooked to be firm to the bite and should not be mushy or sticky.
  6. Drain well and throw the water away.
  7. Refresh the noodles under cold water. This ensures that they stop cooking.
  8. Transfer to a plate and allow the noodles to dry completely for 10 to 15 minutes.
  9. Heat enough oil in a deep non-stick pan.
  10. Lower the flame to medium and a few noodles at a time when the oil is hot enough.
  11. Deep-fry on a medium flame till they turn golden brown in color from all the sides and the oil stops bubbling. Keep turning the noodles using a perforated spoon time and again to make sure that the noodles they evenly cooked.

  13. Once the crispy fried noodles cool completely, gently break them into pieces by pressing down on them.

These Noodles i always make and store, They can be used for Chinese bhel or even on soups like manchow,. They stay fresh in an air tight container for atleast 10 days.
