For baingan bharta with curds

  1. To make {span class="bold1"}baingan bharta with curds{/span}, make slits at regular intervals, check if any worms inside, then apply the oil evenly over it.
  2. Roast it on a medium flame till it turns black from all the sides.
  3. Meanwhile also take a tomato, make slits at regular intervals, then apply the oil evenly over it.

  5. Remove the skin and roughly chop it and transfer to a deep bowl.
  6. Remove the skin from the brinjal, chop roughly and put in the roasted tomato bowl.
  7. Mash both together really well using a masher. Keep aside.
  8. Heat the oil in a deep pan, add the cumin seeds and asafoetida.
  9. When the seeds crackle, add the onions and saute on a medium flame for 1 minute.
  10. Add the garlic paste, ginger paste and green chillies and sauté on a medium flame for 1 minute.
  11. Add the tomatoes, turmeric powder, chilli powder, coriander powder, cumin seeds powder, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  12. Add the mashed brinjal- tomato mixture , garam masala, coriander and salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  13. Switch off the flame, cool slightly and add the curd and mix well.
  14. Refrigerate the {span class="bold1"}baingan bharta with curds{/span} for atleast 1 hour and serve chilled.
