  1. The first step to make edible cookie dough recipe | gems cookie dough | Indian style eggless cookie dough | is to roast the plain flour. Since we are not going to cook or bake anything in this recipe, it is important to roast the flour till it isn’t raw anymore. So put the flour in a deep non-stick pan and put it over a medium flame.
  2. Dry roast this flour for 2 minutes while stirring in between to avoid browning of the flour. You will know the flour has roasted once you can smell its aroma. Keep aside.
  3. Now we need to prepare the sugar for dough. I'm using a sugar called demerara sugar, which is a type of brown sugar. It has a deep brown color due to the presence molasses in it which gives it a taste similar to caramel. You can even use regular brown sugar for this.
  4. Add the sugar to a mixer jar and blend into a fine powder.
  5. Now put this grinded sugar in a deep bowl for the next step.
  6. To this add the vanilla essence for a vanilla flavor. Be sure to use pure vanilla essence and not the synthetic one.
  7. Now add the soft butter and salt to the sugar. The butter has to be soft so that the sugar and butter combine properly without any lumps. Even though this eggless cookie dough is a dessert recipe, we still add a pinch of salt as it helps in bringing out the flavor of the sugar.
  8. Mix well with a spoon for at least 3 minutes or till the mixture turns smooth and no lumps remain. The sugar will have slightly dissolved in the butter and that is exactly the texture we want.
  9. Now add just 1/2 tbsp of milk. This is so that the dough is not too dry.
  10. Finally add the dry roasted plain flour.
  11. Mix very well with the spoon. It might take a little time as the flour is dry.
  12. Once it is completely incorporated with the butter, you will get a crumbly dough like mixture. Do not use any water in this.

It was worth all the hype. This cookie dough is very easy to make and loved by all. I even made one batch of chocolate chip cookie dough. It tasted mind blowing!!
