For Fattoush
1 pita bread round or oval
oil for deep-frying
3/4 cup cucumber cubes
3/4 cup tomato cubes
3/4 cup iceberg lettuce , torn into pieces
1/2 cup capsicum cubes
1/4 cup finely chopped parsley
1/4 cup finely chopped spring onion greens
1/4 cup chopped mint leaves (phudina)
1/4 cup thinly sliced spring onions whites

To Be Mixed Into A Dressing For Fattoush
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp finely chopped garlic (lehsun)
salt and freshly ground black pepper to taste
1/4 tsp lemon rind
1/2 tsp powdered sugar

  1. To make fattoush salad recipe, place the pita bread on a clean, dry surface and slice it horizontally into 2 using a sharp knife.
  2. Cut into small equal sized squares using a sharp knife.
  3. Heat the oil in a deep non-stick pan and deep-fry a few pieces till they turn golden brown in colour form all the sides. Drain on an absorbent paper. Keep aside.

  1. In a bowl or small glass bottle, take olive oil add lemon juice, chopped garlic, salt, pepper powder, lemon rind and powdered sugar. Mix it well and keep aside.

  1. In a deep bowl combine the cucumber cubes, tomato cubes, iceberg lettuce, capsicum cubes, chopped parsley, chopped spring onion greens, chopped mint leaves and sliced spring onions whites and mix well.

  3. Toss and mix well.
  4. Serve the fattoush salad immediately.

  3. Submerge the lettuce leaves in a bowl of cold water. Let them sit for 5–10 minutes and it will be as good as fresh lettuce. This is a secret tip to make the lettuce leaves crunchy and crispy. Roughly tear and add iceberg lettuce.

This Lebanese salad is just amazing, the pita bread taste great in this recipe along with cucumber, tomatoes, lettuce and spring onions. The dressing has a good taste of olive oil and garlic along with lemon juice.
