1/2 cup sliced onions
2 tsp lemon juice
1 tsp sugar , optional
1 tbsp roughly chopped green chillies
salt to taste

Method for the Healthy Green Chutney

    Method for the Healthy Green Chutney
  1. Take one fresh bunch of mint leaves. The leaves should not be brown and yellow but should be bright green in color.
  2. Separate the leaves from the stems and discard the stems. We are not going to use these.

  3. Thoroughly wash the leaves to remove any dirt and dust that might be on them. You can wash them in a bowl or under running water in a colander.

  4. Roughly chop the leaves to make it easier for blending. We will need around 2 cups of chopped mint leaves. Keep aside.
  5. We are also going to use coriander in this Healthy Green Chutney. Take one fresh bunch of coriander. You can refer to the article Benefits of coriander to know more.

  6. Separate the leaves and the stems. We are only going to use the leaves and the soft stems.
  7. Rinse the coriander leaves in water, either in a bowl or in a colander to remove any dirt that might be stuck to them.
  8. Roughly chop the leaves for the green chutney.We need approximately 1 cup.  Keep aside.
  9. We have also added onion here. We have used 1/2 cup sliced onions, which we get by slicing 1 onion.
  10. Put the mint leaves in a mixer jar.
  11. Then add the coriander leaves.
  12. Now add the onions.
  13. Now add the lemon juice. This will help maintain the color of the chutney. If you don’t add lemon juice, the chutney will keep on getting darker.
  14. Add the sugar to balance the flavor of the lemon. Since this is a healthy recipe, we have only used 1 tsp of sugar.

  15. Also add roughly chopped green chillies.You can increase or reduce the chillies according to your preference.
  16. Finally add salt to taste.
  17. Add 1/4 cup water so that it is easily blended.
  18. Blend into a smooth paste. If the jar is too big, you will have to stir it once or twice in between to get a smooth paste.
  19. Remove in a bowl and use as required. This will yield around 1.25 cups of chutney.
  20. Store this in the freezer in an airtight container. You can use this chutney as a dip for Baked Methi Muthias or serve it along with Green Pea Pancakes .

How long we can keep in refrigerator?

   We would recommend to make it fresh as required but you can also store it for 2 days max in fridge.

Awesome chutney! pudina is the most dominant flavour followed by coriander which gives it a fresh aroma. lack of garlic makes it subtle and does not leave your mouth smelling bad! so, a nice change! Goes well with almost anything...from idli to dhokla.
